In 2008, Bartender Lauren Mote started making extracts and bitters for the sheer love of science and experimentation. After the creation of over 43 different kinds that expressed ingredients and their tasting notes, Mote’s extracts developed into an award-winning cocktail program, and hundreds of worthy cocktails. In 2010, Mote partnered in life and business with Chef Jonathan Chovancek, and Kale & Nori was born. Over the next two years they would tirelessly develop recipes and applications for extracts to become the bridge between culinary and the cocktail. Bittered Sling Extracts is a pipe-dream come to a tasty fruition, celebrating what beautiful ingredients can provide the palate, plate and potion.

Bright and vibrant fresh grapefruit peel meets floral, herbaceous and bitter fresh Lillooet hops; soft South Asian peppercorns and bitter cinchona.
Beverage recommendations: White spirits, blended scotch & Irish whiskies, dry vermouth and other aromatized wines, sherry, sparkling or flat water, zero proof cocktails, beer and cider.
Cooking recommendations: Brilliant with fish and shellfish, replacing the final squeeze of citrus to deglaze or season. We love the herbaceous bitterness, which pushes forward rich and spicy cuisine.

Orange & Juniper
Tasting notes of fresh orange peels, herbaceous juniper and bright green cardamom with the bittering power of bright, fresh turmeric and cinchona bark. This elegant bitters easily stands up to oak-matured spirits, and has a powerful presence in lighter cocktail applications.
Beverage recommendations:
 White spirits, oak-matured spirits, Tequila, Pisco,  vermouth and other aromatized wines. Perfect as an addition to sparkling or flat water,  smoothies, tea, white spirits, whisk(e)y, vermouth, sake, beer & cider, sparkling wine
Cooking recommendations:
 Replace vanilla extract in 
blonde cakes, dessert sauces, cookies and shortbreads. This is the ultimate finish for a hollandaise sauce and makes a killer marinade for fish and shellfish.

Plum & RootbeerBeverage Tasting Institute International Review of Spirits Award: Silver Medal (2014)
An Ayurvedic blend of barks and roots, with an inherently “hot” palate of warm spices, the Plum & Rootbeer bitters is among one of our best sellers. Bringing out the sweet and savoury notes of ingredients its paired with, even the simple execution of an old fashioned, a Mai Tai or a Tom Collins benefit from this aromatic bitters. A touch of prune plums round out the palate, and help give the bitters its balanced richness.

Moondog
One of the original creations from the Bittered Sling line up, the Moondog has been one of the quintessential expressions in the portfolio. Inherently smoky, latin, savoury and spicy, the Moondog lifts any oak-matured spirit. With notes of dried aromatic chilies, lime leaves, wild oregano, and smoked black pepper – a latin feel. This one is a brilliant expression of Latin America and the southern USA.
Beverage recommendations: Oak-matured spirits, and their best cocktails – Old Fashioned, Manhattan, anything with Tequila, rum and mezcal, whether shaken or stirred. Hot Chocolate, French-Press Coffee also receive Moondog exceptionally!

Harvested from the far reaches of the Malagasy plantations and roasted at Vancouver’s East Van Roasters, the intensely rich Madagascar cacao beans take center stage in these dry, aromatic chocolate bitters. Evoking notes of dark cacao with oak and a maturely spiced palate, and lingering hints of a damp rolled cigar.
